This Warm Chicken-Lentil Salad Recipe is a healthful and delicious entrée salad that makes a perfect one-dish meal. It also goes great with a cooked vegetable and a crusty slice of bread.

Warm Chicken-Lentil Salad Recipe
1 cup French green lentils
3 cups water
1 1/2 teaspoons kosher salt, divided
2 tablespoons olive oil, divided
2 cloves garlic, minced
1 small onion, diced
1 stalk celery, chopped
1 1/2 pounds chicken tenders (8 to 12 tenders)
1/2 teaspoon freshly ground pepper
1/4 cup red wine vinaigrette salad dressing (store-bought works fine)
1/4 cup minced Italian parsley
In medium sauté pan with tight-fitting lid, combine lentils, water and 1 teaspoon salt. Bring to a boil, then reduce heat. Cover and simmer for 25 to 30 minutes, or until lentils are tender.
While lentils cook, in another sauté pan, heat 1 tablespoon olive oil over medium heat. Add garlic, onion and celery, and sauté for 5 minutes, or until vegetables are softened. Transfer vegetables to medium bowl.
In same pan used to cook vegetables, heat remaining oil over medium-high heat. Season chicken tenders with pepper and remaining salt. Place in heated pan and sauté for 3 to 4 minutes per side, or until golden brown.
When lentils are tender, drain any liquid, and add lentils to vegetables. Stir in dressing and parsley, mixing well.
Spoon lentil mixture onto serving platter and top with chicken tenders. Yields 4 servings.
