Roasted Chicken Recipe With Lima Bean Purée

8 chicken thighs
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons olive oil
1 red onion, chopped
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/8 teaspoon ground cinnamon
Pinch allspice
Pinch cayenne pepper
1/2 cup red wine vinegar
3 ripe tomatoes, cut into large dice
2 tablespoons chopped whole almonds
2 tablespoons chopped fresh Italian parsley

Lima Bean Purée:
2 cups fresh lima beans, or 1 package (16 ounces) frozen lima beans
2 cups water
3 large cloves garlic
1/2 cup coarsely chopped whole almonds
1/4 cup olive oil
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Heat oven to 350°F. Season chicken with salt and pepper.

In large ovenproof sauté pan, heat oil over medium-high heat. Add chicken thighs, skin-side down, and sauté until well-browned, about 4 minutes. Turn and sauté for an additional 4 to 5 minutes. Remove from pan and reserve.
