Ingredients
- 2 large eggs, beaten slightly
- 2 cups canned pure pumpkin
- 1/2 cup sugar
- 1/2 cup sorghum or light molasses
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1 can (12 ounces) evaporated milk
- 1 9-inch pie crust, unbaked
Directions
- Preheat oven to 425 F.
- In bowl, mix together eggs, pumpkin, sugar and sorghum. Stir in salt, cinnamon, cloves, ginger and evaporated milk, and mix well. Pour filling into unbaked pie crust.
- Bake for 15 minutes. Reduce oven temperature to 350 F, and continue baking for an additional 45 minutes, or until knife inserted in center comes out clean.
