3/4 cup honey
3 tablespoons oil
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon grated orange peel
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 1/2 cups grated zucchini
1/2 cup sunflower seeds
Preheat oven to 325 F. Generously grease 9-by-5-by-3-inch loaf pan; set aside.
In large bowl, beat egg slightly. Add honey, oil and vanilla; mix well.
In medium bowl, combine flour, baking powder, orange peel, baking soda, ground ginger and salt.
Add flour mixture, grated zucchini and sunflower seeds to honey mixture and mix until well-blended. Spoon batter into prepared pan.
Bake for about 1 hour, or until wooden pick inserted near center comes out clean.
Cool for 10 minutes in pan
