1 cup dried lentils
2 teaspoons salt, divided
1/2 pound diced salt pork (about 1 cup)
1/2 cup minced onion
1/4 cup diced celery
1 tablespoon all-purpose flour
2 tablespoons apple cider vinegar
1/4 cup hot water
1/8 teaspoon pepper
Pick over and wash lentils; soak in 1 quart cold water overnight.
Drain. Add 3 cups boiling water and 1 1/2 teaspoons salt to lentils; cook, covered, for about 1 hour, or until tender. Drain.
Sauté salt pork until crisp and brown. Add onion and celery; cook for 3 minutes.
Stir in flour. Add lentils, vinegar, water, pepper and remaining salt.
