Old Fashioned Peach Cobbler

Ingredients

  • 3 cups sliced fresh peaches
  • 1 cup plus 3 tablespoons sugar, divided
  • 1 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 1-1/2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 1 egg
  • 1/2 cup milk
  • Whipped cream or ice cream for topping

Directions

  • Arrange sliced peaches in a 9-inch round baking dish. Mix 1 cup sugar, lemon peel, lemon juice, and almond extract; sprinkle over peaches. Bake at 400 F for 10 minutes.
  • While peaches are cooking, sift together flour, 1 tablespoon sugar, baking powder, and salt. Cut in shortening. Beat egg and mix with milk; add egg and milk to dry ingredients, mixing just enough to moisten.
  • Drop dough over hot peaches, spreading slightly with back of spoon. Sprinkle with remaining 2 tablespoons sugar.
  • Bake an additional 30 minutes. Top with whipped cream or ice cream, if desired.
