Mulberry Waffles
Ingredients
- 2 cups flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 13⁄4 cups milk
- 2 eggs
- 6 tablespoons cooking oil
- 3⁄4 cup mulberries
Directions
- Put dry ingredients in a large mixing bowl. In a separate bowl, combine milk, eggs, and oil, and stir until mixed well.
- Add wet ingredients to dry ingredients. Mix until smooth, and then gently fold in mulberries. Set batter aside for 5 minutes.
- Follow manual for your waffle maker, using 1⁄2 cup batter per waffle.
Elaine prefers her mulberry waffles topped with butter and maple syrup or a sprinkle of powdered sugar, but Bruce likes his plain. The plain approach allows the natural sweetness of wild mulberries to come through. With mulberries, many cooks opt for less sugar in recipes, given the fruit’s inherent sweetness.
Yield: 8 to 9 waffles.
