Mulberry Muffins Recipe

Mulberry Muffins

Ingredients

  • 2 tablespoons softened butter
  • 1⁄2 cup sugar
  • 1 egg
  • 1⁄4 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1⁄3 cup milk
  • 3⁄4 cup fresh mulberries

Directions

  • Preheat oven to 375 F.
  • Combine butter and sugar in bowl. Mix until well-creamed. Add egg, and beat until thoroughly mixed. Mix in vanilla.
  • Combine flour, baking powder, and salt in a separate small bowl.
  • Add dry ingredients alternately with milk to egg-butter mixture. Gently stir in berries.
  • Fill 6 to 8 paper-lined muffin cups 2⁄3 full of batter.
  • Bake for 25 to 30 minutes.
