Mulberry Muffins
Ingredients
- 2 tablespoons softened butter
- 1⁄2 cup sugar
- 1 egg
- 1⁄4 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄3 cup milk
- 3⁄4 cup fresh mulberries
Directions
- Preheat oven to 375 F.
- Combine butter and sugar in bowl. Mix until well-creamed. Add egg, and beat until thoroughly mixed. Mix in vanilla.
- Combine flour, baking powder, and salt in a separate small bowl.
- Add dry ingredients alternately with milk to egg-butter mixture. Gently stir in berries.
- Fill 6 to 8 paper-lined muffin cups 2⁄3 full of batter.
- Bake for 25 to 30 minutes.
