Grilled Lamb Chops Recipe With Strawberry Salsa

Grilled Lamb Chops

1/4 cup olive oil
2 tablespoons balsamic vinegar
4 cloves garlic, minced
Salt and pepper
8 grassfed lamb chops
Strawberry Salsa, below

Light coals on grill. Away from heat, spray grate with
cooking spray. 

In bowl, make lamb chop marinade by combining oil, vinegar,
garlic, salt and pepper.

Place lamb chops in glass baking dish. Pour marinade over
chops; turn chops to coat thoroughly. Cover and let stand at room temperature
for 20 minutes.    

Place chops on grill, and grill for 2 to 4 minutes per side,
depending on size (grassfed lamb chops are usually about 1 inch thick), turning

Strawberry Salsa Recipe

1 cup stemmed and coarsely chopped fresh strawberries
1 small peach, skinned, pitted and chopped
1/2 cup chopped cherry tomatoes
1/2 jalapeño, seeded and minced
1/2 small onion, chopped
1/4 cup chopped cilantro
2 cloves garlic, minced
1 tablespoon extra-virgin olive oil
1 tablespoon balsamic vinegar
2 teaspoons fresh lime juice
1/2 teaspoon sea salt

In bowl, combine all ingredients. Cover and let stand at room temperature
for 20 minutes. Refrigerate until ready to serve. Yields 2 cups.
