Cornbread is a staple in the South. It can be served with your savory dinner or spread with butter and preserves and eaten for dessert. It is also quick and easy to make it yourself with real, healthy ingredients!
1/2 cup whole wheat flour
1 teaspoon salt
1 tablespoon baking powder
1 1/2 cups corn meal
3 tablespoons honey
1 cup milk
1/4 cup bacon grease or other oil - coconut, olive oil, whatever you have
Preheat oven to 450 F.
Mix all ingredients except for the bacon grease (or oil).
Add your grease directly to your cast-iron skillet and place in the hot oven for several minutes until is is melted and hot.
Carefully remove the skillet from the oven and dump your cornbread batter directly on top of the oil. This will give you nice crunchy cornbread.
Bake for 15 to 20 minutes until golden brown, and a toothpick inserted comes out clean.
**If you intend to make muffins, or just don't have a cast-iron skillet to bake in, no worries! Simply mix your liquid oil into your batter and proceed. It works just fine that way as well!**
