Double Chocolate Almond Cake

Double Chocolate Almond Cake from One Ash Farm Recipes

1 boxed chocolate with chocolate chips quick bread or muffin mix
1 teaspoon pure almond extract

Preheat oven to 350 F. Grease bundt cake pan; set aside.

Prepare the mix as directed for muffins, adding the almond extract. Pour into prepared pan, and bake for about 25 minutes.

Cool for 20 minutes, then turn onto a cooling rack to finish cooling completely.

Place on cake plate prior to glazing.

Chocolate Glaze
1 cup confectioner’s sugar
2 tablespoons melted butter
3 tablespoons cocoa powder
1 teaspoon pure almond extract
3 tablespoons very hot water
Chopped almonds, roasted or raw, unsalted

Combine all except the almonds; mix until smooth. Spoon evenly over the top of the cake, allowing it to run into the crevices. Immediately top with chopped almonds. Cool before serving.
