1 cup quinoa flakes
1/3 cup light brown sugar
1/2 cup Earth Balance non gmo coconut oil peanut butter
1/2 cup organic raw honey
1 cup organic brown or white rice flour
bottled water — preferably alkaline, (but don’t use “filtered water” that means it’s tap water) (use a little, the amount’s at your discretion, just so the cookies are not dry. They’ll also stay together better when you bake them with a bit of water. Less than ½ cup is needed generally)
1/2 tablespoon baking soda
1 tablespoon flax seed
Preheat oven to 350 F.
Place on cookie sheet in any shape you’d like. Make them as flat as possible though, if you make balls, they take too long to cook and never come out right.
I like to use the small silicon cake pans I got from the dollar store that are shaped like hearts. Also remember the bigger the cookie, the longer it will take to cook. It’s hard to burn them though. Just watch them. You can leave them in the oven after you shut it off for a few minutes to finish cooking. If the cookies are the size of regular cookies, like store bought, they should take about 10-15 mins max. If you make them the size of “man cookies” as I call them, they’ll take 15-20 mins, plus about 10 minutes in the heated oven once you turn it off. Sometimes it’ll take even longer, depending on how big.
If you make a small cake like the one I was talking about, expect it to take at least 30 minutes. These are called conqueror cookies for a reason.
