Green beans complement almost every main dish. They're vibrant and beautiful in their own right, and this green beans with bacon recipe is no exception. For guests who don't eat meat or a lighter side dish, omit the bacon and add a chopped onion, sautéed. Try adding almonds for additional flare.
Green Beans With Bacon
1 tablespoon oil
12 slices bacon, or turkey bacon, cut into 1/2-inch pieces
1/4 cup packed dark brown sugar
11/2 cups water
2 pounds fresh green beans, trimmed and broken into 2-inch pieces
Heat oil in a large skillet over medium heat; add bacon and cook, stirring frequently, for 5 to 7 minutes, or until browned. Add brown sugar and water, stirring to mix well. Bring mixture to a boil. Add beans and reduce heat to low. Cover and simmer for 50 to 60 minutes, or until beans are soft and all liquid has been absorbed. Yields 8 servings.
