Agave Sweetened Blueberry Jam Recipe

Agave is a natural sweetener extracted from the heart of the agave plant. Agave is a low glycemic index sweetener, so it is slowly metabolized by the body preventing spikes in blood sugar. It is 25 percent sweeter than sugar, so you need less. It has been eaten by ancient civilizations for more than 5,000 years. It tastes just wonderful in this blueberry jam recipe.

Agave Sweetened Blueberry Jam

8 cups fresh or frozen blueberries, chopped
1 cup water
1 cup unsweetened, filtered apple juice
2 boxes powdered pectin, no-sugar-necessary type
2 cups Organic Blue Agave Sweetener 

Stir together blueberries, water, apple juice and pectin. Bring to boil, stirring constantly. Continue stirring and hold boil 3 minutes.

Remove from heat. Stir in sweetener. Stir until foam is absorbed.

Pack into clean jars. Wipe rims of jars with clean, wet cloth. Seal. Process in hot water bath or pressure cooker according to manufacturer’s directions. Yields 10 to 12 8-ounce jars.

NOTE: More or less sweetener may be used to compensate for natural tartness or sweetness of blueberries.
