This incredibly simple turkey and asparagus stir-fry recipe uses cashews for extra crunch, flavor and heartiness. If you're not a cashew fan, try walnuts or peanuts for a variation.
10 ounces asparagus
1 lb. roasted turkey
1 tablespoon extra-virgin olive oil
1 teaspoon minced garlic
1 tablespoon lemon juice
1/2 teaspoon dried marjoram
2 tablespoons toasted, chopped cashews
Salt and ground pepper to taste
Slice asparagus diagonally and set aside. Cut turkey into 1/2-inch thick slices.
In wok or large skillet over medium heat, heat oil. Add garlic, lemon juice, marjoram, cashews, turkey, salt and pepper. Stir-fry 5 minutes until heated through. Add asparagus and stir-fry 2-3 minutes more. Asparagus should retain its color. Yields 4 servings.
