Toasted Oat Drops
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or margarine
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla
1 1/2 cups toasted old-fashioned oats (see tips)
1/2 cup flaked coconut, optionalÂ
Heat oven to 350°F. Sift together flour, baking soda, baking powder and salt.
Cream together butter, sugar, brown sugar, egg and vanilla.
Blend dry ingredients into creamed mixture. Stir in toasted oats and coconut, if desired.
Drop by teaspoonfuls onto greased baking sheets. Bake for about 8 minutes, or until golden brown. Cool on sheets for 1 minute, then remove to wax paper to cool completely.
Store in tightly covered tin. Cookies may be crumbled to use as a topping for ice cream, yogurt, hot oatmeal or oatmeal parfaits.
