Sue Hamlett's Lemon Jell-O Cake Recipe is a sweet summer dessert that calls for granulated sugar rather than confectioner's sugar.

Sue Hamlett, Pamplin, Virginia, sends this Lemon Jell-O Cake Recipe, writing, “My mom used to make this cake for me when I was a little girl, and I looooved this cake. This was the moistest cake, and I love lemon-flavored anything. This recipe had been lost for a long time and was not rediscovered by our family until, sadly, the passing of my mom’s mom. We found this recipe among her things. I had tried to find other recipes for the cake, but they all called for confectioner’s sugar, and I like this one with the granulated sugar. This cake brings back happy childhood memories for me. Ah, to be young again (only smarter).”

Sue’s Lemon Jell-O Cake Recipe

1 small box Lemon Jell-O
3/4 cup warm water
3/4 cup oil
4 eggs, beaten
1 box yellow cake mix
2 lemons
1/2 cup sugar

Heat oven to 350°F. Grease tube pan; set aside.

In large bowl, dissolve Jell-O in water. Add oil and eggs; mix well. Add cake mix gradually, until well blended.
