Easy Mincemeat Fruitcake Recipe (Magic Fruitcake)
1 package (9 ounces) None Such Mincemeat
1 1/2 cups water
2 1/2 cups flour
1 teaspoon baking soda
2 eggs, lightly beaten
1 can (15 ounces) sweetened condensed milk
2 cups mixed candied fruits and peels
1 cup coarsely chopped walnutsÂ
Heat oven to 300°F. Butter 9-inch tube or springform pan. Line with wax paper and butter again.
Break mincemeat into pieces in medium-sized saucepan. Add water. Stir over medium heat until lumps are broken. Boil for 1 minute, stirring occasionally. Cool.
Sift flour and baking soda.
Combine eggs, mincemeat, sweetened condensed milk, candied fruits and peels, and nuts. Fold in dry ingredients and pour into prepared pan. Bake for 2 hours, or until top is golden and center springs back when lightly touched. Cool. Turn out of pan and remove wax paper.
Note: For an even richer fruitcake, use two 9-ounce packages of mincemeat. Quantities of water and other ingredients remain the same.
