Sautéed Onions and Bell Peppers
2 tablespoons extra-virgin olive oil
2 medium onions, halved vertically and sliced thin
2 medium red bell peppers, julienned
1⁄8 teaspoon salt
1⁄8 teaspoon coarsely ground black pepper
In large skillet, heat oil. Add onions and sauté for 15 to 20 minutes, or until browned, stirring occasionally.
Add remaining ingredients and cook for an additional 10 minutes.
