Original Pound Cake Recipe
1 pound butter (no margarine)
1 pound sugar (2 cups)
1 pound eggs (12 large)
1 pound flour (4 cups before sifting)
1/4 teaspoon salt
1/4 cup lemon juice
1 tablespoon grated lemon rind
Icing:
1 tablespoon butter
1 box confectioner’s sugar
Juice of 2 lemons
Grated rind of 1 lemon
Cream or evaporated milk (if not soft enough)
For the cake: Heat oven to 325°F. Grease and flour cake pan; set aside.
Cream together butter and sugar. Add eggs, one at a time, beating after each addition.
Add flour, a little at a time. Add salt, lemon juice and rind.
Pour into prepared pan. Bake for 90 minutes.
For the icing: Cream together butter, confectioner’s sugar, lemon juice and rind. To reach desired consistency, add a few teaspoons cream.
