These wonderful cookies turn out thin. They have a delicious flavor, and the cereal adds a little of the unexpected.

Oatmeal Coconut Cookies Recipe

Ingredients:

• 1 cup butter, room temperature
• 1 cup brown sugar
• 1 cup sugar
• 2 eggs
• 2 teaspoons vanilla
• 1-1/2 cups flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 2 cups oatmeal
• 1 cup shredded coconut
• 2 cups crispy rice cereal

Instructions:

1. Preheat the oven to 350 degrees.

2. Cream the butter and sugars in a large mixing bowl.

3. Add the eggs and vanilla and beat until fluffy.

4. Mix in the flour, baking powder, baking soda, oatmeal, coconut, and cereal.

5. Drop batter by tablespoons onto an ungreased cookie sheet.

6. Bake for 10-12 minutes or until set.
