No Weep, No Shrink Meringue
• 1 tablespoon cornstarch
• 8 tablespoons granulated sugar, divided
• 1/2 cup water
• 3 egg whites
• Dash of salt
1. In small saucepan, combine cornstarch, 2 tablespoons sugar and water, and cook over low heat until mixture is clear. Remove from heat.
2. In small bowl, whip egg whites until peaked, then slowly add heated cornstarch mixture. Beat until creamy. Add salt and remaining sugar, and beat until fluffy.
3. Pile meringue on filling in pie crust, and bake at 350 F for 20 to 30 minutes, or until meringue is gold tinged.
