I decided it was the perfect time to try some new recipes and experiment with others. I opened my trusty copy of GRIT’s Guide to Homemade Bread to find which recipes would be the lucky candidates to try! The first I chose was the Herbs and Cheese Bread recipe. This is not a yeast dough, is very easy to make, and is so worth it.

Herbs and Cheese Bread Recipe

Recipe by Sue Leone, St. Paul, Minnesota 

1 1⁄4 cups unbleached flour, unsifted
1 1⁄2 tablespoons baking powder
1⁄2 teaspoon baking soda
Dash of black pepper
1 1⁄2 teaspoons sugar
1 egg (or two egg whites)
2⁄3 cup buttermilk (or 2⁄3 cup low-fat milk to which 2 teaspoons white vinegar has been added)
1 1⁄2 to 2 tablespoons oil (preferably light olive oil)
1⁄3 cup freshly grated Parmesan cheese
1⁄3 cup grated part-skim provolone or mozzarella cheese
2 tablespoons chopped fresh Italian parsley
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano
1⁄2 teaspoon chopped fresh savory 

In mixing bowl, combine flour, baking powder, baking soda, pepper and sugar.

Add egg, buttermilk and oil, and stir until just blended. Stir in cheeses and herbs, mixing until just blended.

Pour into greased 81⁄2-by-41⁄2-by-21⁄2-inch bread pan.

Bake for 45 minutes at 350°F. Cool in pan for 5 minutes, then turn onto cooling rack. Serve warm. 

I actually made two batches. The first I made in a normal loaf pan. The next batch I baked in a pie pan. When it was finished baking, I made deep-dish pizza out of it. The cheese and herbs in the bread made it really good. Simply add some pizza sauce, cheese, and whatever toppings your family happens to like, then put it back in the oven just long enough to melt the cheese. A very easy meal your family will thank you for!
