Ginger Snaps

Ginger Snaps from One Ash Farm Recipes

1 cup sugar
1 cup dark corn syrup
1 cup shortening or lard
1 beaten egg
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1 teaspoon baking soda
4  1/2 cups unbleached flour

Heat the sugar, corn syrup and shortening until well blended. When slightly cooled, add the beaten egg.

Stir in the remaining dry ingredients and mix well.

Drop by large teaspoonful onto a lightly greased cookie sheet. Bake at 400 F until golden and crispy.

Lee Ann, fall is the best time for baking, don't you think? Summer heat prevents the baking and cooking that heats up the kitchen. Coming into the fall weather with soups, bread, and other baking aromas are awesome. My daughter that lives with me is the baker and is quite good at it. We had pumpkin bread just last week. It was terrific and a great way to begin the fall season. ***** Have a great ginger snap cookie day.
