5-Minute Dairy-Free Fudge Recipe
Use soy milk, confectioners’ sugar, coconut milk and dairy-free chocolate chips to make this unique fudge.

5-Minute Dairy-Free Fudge Recipe
1/2 cup soy milk or almond milk
1/3 cup confectioner’s sugar
1/2 cup full-fat coconut milk
18 ounces (about 3 cups) dairy-free semi-sweet chocolate chips
1/4 cup dairy-free soy margarine, chopped into pieces
Grease and then line 8-inch-square baking dish with parchment paper, so that parchment hangs over the sides slightly; set aside.
In medium-sized heatproof bowl (big enough to fit all ingredients but small enough to fit into microwave), mix together soy milk and confectioner’s sugar, mixing until smooth and combined. Add coconut milk and mix until smooth. Add chocolate chips and soy margarine pieces, and stir until evenly mixed.
Microwave mixture on medium for 2 to 5 minutes, stirring every minute or so, until all chocolate chips have melted. Remove from microwave and stir mixture until smooth and even in consistency and color. Pour into prepared dish and refrigerate until set, 3 to 4 hours. Serve cold.
