Cooking with Oats
Skillet Oats
1 1/2 cups old-fashioned oats, uncooked
1 large egg, beaten
3 tablespoons butter or margarine
3/4 cup water, broth or fruit juice
1/4 teaspoon salt
In medium bowl, combine oats and egg. Mix until oats are completely coated.
In 10-inch skillet over medium heat, melt butter. Add oat mixture. Cook, stirring constantly, about 5 minutes, or until oats are dry, separated and lightly browned.
Add liquid and salt, and continue cooking, stirring occasionally, for 3 to 4 more minutes, or until liquid evaporates.
Serve hot as a substitute for rice or potatoes. Fruit juices add sweetness to oats; add your favorite herbs or spices to oats as they cook to complement the rest of the meal.
