Baked Rice Pudding
1⁄4 cup rice
1 quart whole milk, scalded
1⁄2 cup sugar
1⁄4 teaspoon nutmeg
1⁄2 teaspoon salt
1 tablespoon butter
Rinse rice in colander.
Combine all ingredients in greased baking dish, mixing well.
Bake in moderate oven (325°F) for about 2 1⁄2 hours, stirring occasionally as a brown crust forms. Do not stir during last 30 minutes. Yields 6 servings.
