Herbed Cornmeal Dumplings
1 cup fine-ground cornmeal
1 cup all-purpose flour
4 teaspoons baking powder
1⁄2 teaspoon salt
2 tablespoons fresh herbs, such as tarragon, parsley, thyme, sage, dill or basil
3⁄4 cup whole milk
Sift together cornmeal, flour, baking powder and salt. Stir in herbs.
Add milk and mix to form soft dough, adding more milk if necessary. Let stand for 5 minutes.
Drop by tablespoons into boiling stew and cook for 20 minutes.
